Anzac cookies (Almond,Oatmeal)

There are cookies and cookies but Anzac cookies are something else. They are ridiculously so easy and you can do either a crunchy one or a slightly chewy one . You need to adjust the oven timings for that.The ingredients are the same for all anzac cookies, very easy and all available in the kitchen.Anzac cookies are sweet biscuits popular in Australia and Newzeland .These are made using rolled oats,flour,golden syrup,baking soda and desiccated coconut.

These cookies have been associated with Australian and Newzealand Army Corps (ANZAC) established in World War 1.It has been claimed that these cookies were sent abroad to soldiers by wives as they kept well during naval transportation and had a long shelf life.

Take a walnut sized ball of cookie mixture and place on the greased sheet and slightly flatten as shown.

Baked to golden perfection.

 

Ingredients:

  • 1 cup All purpose Flour
  • 1 3/4 oats cup ( I used oats flour )
  • 1 cup sugar / brown sugar
  • 100 g butter
  • 2 tbsp boiling water
  • 2 tbsp golden syrup.
  • 1 tsp Baking soda
  • 3/4 cup of chopped almonds.
  • 1/2 cup coconut

Method:

Combine hot water,baking soda,golden syrup and reserve the mixture.
In a big bowl combine the flour,sugar,oats,nuts and make a well in the centre.
Put the mixture that we set aside into the well and combine all the ingredients to make a cookie mixture.
Heat oven to 180 degrees C .Roll the mixture into small balls and place on a greased baking sheet at least 1 inch apart as the cookie will expand. Place the ball on the greased sheet and slightly flatten it as shown in the pic.
Bake for 10  to 12 minutes until golden.
