This is a delicious coffee cake with an amazing walnut streusel sprinkled on top and in between the cake, the cake itself baked using some left over pan calke mix . The recipe is based on Betty Crocker s recipes , though i made alterations by making it egg free,

Ingredients 

TOPPING

1/3 cup Pancake mix
1/3 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1/3 cup chopped nuts ( I used Walnuts )
1/4 cup butter, softened
2 tsp any flavored instant coffee powder.
BATTER.
2 cups Pancake mix
1/2 cup sugar
1/4 cup banana puree
1/2  teaspoon ground cinnamon
3/4  cup sour cream or buttermilk ( thick )
1/4 cup Oil
3/4 cup yogurt

Method1.HEAT oven to 180 C  ,Grease  9-inch baking pan .

2.First make the topping ready. MIX pancake mix, brown sugar,  cinnamon, chopped nuts ,butter and coffee powder for topping in a medium bowl until combined.  It should look crumbly .Set aside.
3.Next combine the  pancake mix, sugar and 1 teaspoon cinnamon. Add sour cream, oil and yogurt.. Blend  until dry ingredients are just about   combined. Spread half the batter into prepared pan, sprinkle with half the topping mixture. Spread with remaining batter and sprinkle with remaining topping.
4.BAKE 30 to 35 minutes or until toothpick inserted in center comes out clean.  Oven time will vary , so look for the top getting browned and cake pulls from the side .
Serve garnished with powdered sugar, if desired.
