It is very difficult to get kids, toddlers in particular to get sufficient vegetables and lentils in their diet.
Lentils are a great source of proteins , so it is good idea to mix them with a medley of vegetable s and make soups or sambar.
Here I tried a simple lentils and vegetable curry . It includes a choice of kid friendly interesting veggies thats sure to please your kids.
Lentils and vegetable curry
This dish is very simple, versatile and use any lentil of your choice like beans,green lentil, chickpeas,red lentil,cow peas and combine with vegetables like yellow pumpkins, brinjals, beans, cabbage, sweet potatoes to name a few.
1 cup carrots peeled and chopped.
2 small tomatoes
3 Okras chopped.
1 green bell pepper cut into small pieces.
1/2 cup sweet corn kernels
1 tbsp coriander leaves for garnish or coriander paste.
3 tbsp of moong dal ( green gram dehusked split )
1 onion sliced thinly ( optional )
Ingredients for tempering
1/2 tsp mustard seeds.
Pinch of cumin powder.
salt to taste.
Pinch of turmeric powder.
2 tbsp lime juice.
water to cook vegetables.
Take a small deep pot, cook the moong dal with sufficient water, and keep the flame on low as the water will spill over, or else pressure cook to soft.
In a pan, add 2 tsp of oil, add mustard seeds, splutter, add the onions, saute well, add some curry leaves too, remove while serving kids., pinch of turmeric powder, cumin powder, add all the vegetables, stir fry for few minutes.
Add tomatoes and add enough water to just cover the ingredients in the pan.
Cover with lid and cook vegetables till just soft.
Add in the dals and stir well, let this mixture thicken.
Remove when done and add the lime juice.
Garnish with coriander leaves.
Serve hot mixed with rice, this is a great healthy dish for toddlers and adults alike..
Saute the okras and tomatoes separately , to prevent the stickiness of okras in the gravy.
All the ingredients used especially turmeric, cumin, are good for tummy .
