Vegetable Kurma is a very delicious mixed veg preparation which goes as a great side dish with aapam, rotis, phulkas.
In South there are many variations of kurma. To simplify the procedure and to enable one to make a quick delicious vegetable kurma with available vegetables , I have given a very simple recipe for a home made Kurma masala powder which is the main ingredient to uplift your gravy.
This recipe helps to quicken the method , just by adding the ready power, you can prepare quick veg kurma anytime.
note: adding ground paste is optional, by adding only kurma powder itself to cooked vegetables, we can make yummy kurma, this taste can be elevated by adding coconut milk powder instead of ground paste .
useful to bachelors and those pressed for time and need a quick veg dish .
Ingredients: To make in bulk
use as required for recipe .
1 cup coriander seeds
10-15 red Kashmiri chillies depending on your preference for spice..increase or decrease as per your taste
2 1 inch cinnamon sticks
10 green cardamom seeds
1/2 cup khus khus ( poppy seeds)
2 tbsp fennel seeds
1/4 cup broken cashew nuts
1/2 cup coconut powder ( dry desiccated )
a piece of nutmeg ( small)
2 mace strands
1 star anise
2 bay leaves
1 tbsp cloves
1 tbsp shah jeera
1 tsp pepper corns
2 tsp turmeric powder
1/2 tbsp dry ginger powder
2 tbsp roasted gram dal
Dry roast all ingredients separately and when cooled, powder them.
Store in a air tight container.
Coconut may be avoided in the powder and added fresh while making kurma.
Coconut milk and yogurt may be added while preparing kurma.
To make a very quick delicious Veg kurma.
1-2 cups mixed vegetables cubed.
1-2 small tomatoes ,
1-2 green chillies
4-5 almonds blanched or soaked few minutes
1-2 tbsp curd
some coriander leaves
coconut milk ( optional )
Take 2 cups of mixed vegetables cubed to small pieces.
In a cooker pan add some oil around 3 tsp. , sautee the vegetables.
If you wish add some ginger garlic paste at this stage, saute well.
Add 2 tbsp of this prepared home made kurma masala powder, add some water around 2 cups, salt.
Pressure cook for 2 whistles.Meanwhile you can add a puree of one or two tomatoes, ground with 2 green chilies, few almonds ( blanched ) and 1-2 tbsp curd.. to get a rich gravy .
After 2 whistles, let the cooker cool down, open the lid, gently mash some vegetables with the ladle to get a thickened gravy, add the ground paste ,let cook for 1 minute , and add some chopped coriander leaves .
Delicious kurma ready .
