This 10 grain adai mix is the most healthiest combination bringing in many healthy dals and millets together , with addition of oats . The end result is a great tasty spicy adai.
You have the choice of the soak and grind method if you have the time or and also prepare this powder in bulk for carrying along with you on your travels .Like many such mix recipes that I have made before I am concentrating on the powder types , ready to make adai mix as it is useful to people on the move.
10 grain adai mix is just to remind that there are 10 healthy grains in the mix and you can blend this powder in advance and store in air tight containers and enjoy quick adai when ever you feel like.

Makes 3 3/4 cups of ready to make adai powder
1 cup = 225 grams
1/4 cup toor dal
1/4 cup Chana dal
1/4 cup udad dal
1/4 cup moong dal (,split )
1/4 cup kodo millets
1/4 cup barnyard millets ( kudiraivali )
1/4 cup finger millets
1/4 cup oats
1/4 cup samai ( little millets)
1/4 cup thinai ( foxtail )
2 tsp pepper
10 red dry chillies
Big pinch of asafoetida powder or grated crystal of asafoetida
add some curry leaves after dry roasting till crisp , let cool and add to powder.
Powder in a mixie .
You can powder 3/4 quantity to a very smooth texture and remaining to a little rava / sooji like consistency .Mix both the powders well .Store in a clean dry container .
The ingredients mentioned above makes 3 3/4 cups of adai powder .
Cup mentioned here is the baking cup measurement .
To prepare Adai :
Measure the required qty of powder , add salt, mix with water, add curry leaves
make adai dosa batter, allow to rest for 15 -30 minutes .
add more water just before making adai , as the mixed batter would have thickened. before making adai, you can add other ingredinets like drumstick leaves, greens, spinach, methi leaves, shredded cabbage, grated carrots, sliced onions for a healthy filling adai.
prepare adai on a dosa tava with ghee or sesame oil .
1 cup besan flour
1/2 cup rice flour
1/4 cup sooji
1/4 cup oats flour ( for a healthy option ) can skip it if you do not hav e oat flour
1/4 cup moong flour ( optional )
4-5 red chillies or finely chopped green chillies
1 tsp cumin seeds
salt as needed
pinch of asafoetida powder
grated cabbage, chopped onions, some greens like spinach , methi leaves ,
spring onion greens
mix all dry flours, well . add salt
make a dosa batter and allow to rest 15 minutes
just before making adai add in other ingredients,
Heat a tava, grease well, wipe it, pour adai dosa batter and make quick swirls, add ghee or oil after the adai has cooked partially , flip and cook both sides .serve with chutney , butter, jaggery or avial.
