4 tbsp methi seeds/fenugreek seeds ( increase the qty of ingredients after you have tried and tested )
2 tbsp mustard seeds
4 red chillies or as per your taste.
Pinch of asafoetida powder
Pinch of mango powder /aamchur powder
salt to taste
Pinch of turmeric powder
1 tbsp. oil ( sesame oil preferably)
Some crushed kasoori methi can be added to the powder .
The oil should coat every grain so that it stores well and the bitterness is not noticed.
Roast with oil all the ingredients except salt.Cool well and grind coarsely.
Store in a air tight container
add some water for a thick chutney or add some oil to have it with dosas, theplas and chapatis.
Uses of this powder.
1. To mix with rice and have as a methi rice.
2..To sprinkle i some curries.
3. Can be used to make pickles with mangoes or any vegetable, acts as preservative.
4. To make quick methi parathas, use this powder to mix with dough or layer a rolled roti and place another on top, press lightly, roll out again, a tasty healthy methi paratha is ready..
