Capsicum rice or bell pepper rice makes an amazing quick lunch box dish . It makes it even faster if you have already roasted , ground the basic flavouring powder ahead of time . This powder i recommend you make in a bigger quantity , to help you cope with lunch box ideas for hurried mornings, the basic powder is good for making potato onion rice, cabbage rice, mixed vegetable rice, beans carrot rice and so much more .

There are also many variations to making this simple capsicum rice, by usng sliced onions, some chopped tomatoes, garam masla, bay leaves, ginger garlic paste , for those who want a masala taste to the rice .

In fact you can make this dish again and again by using several variations . i kept it simple as the dish not only has a good taste , not too spicy , and kids can enjoy easily . My base powder as the flavouring agent is the key to this recipe and many more rice varieties while making quick lunch box dishes ., it is such a versatile powder i use it liberally from making chutneys, garnish several gravies, to dry curry roast , that i always look forward to making some variety rice for lunch box as an excuse to whip up a laarge batch of this curry powder .

ginger garlc paste can be added

a bayleaf, fennel, some cloves and a cardamom can be added for tempering to give it a masala baath taste . ,in which case the roasted blended powder is not required .

Capsicum rice can also be prepared as a pulav with few spices and garam masla, skip the roast and grind of ingredients mentioned . you will not need the powder if you want to make it pulav style .

Easy lunch box recipe , capsicum rice that can be prepared under 15 minutes if you have cooked rice and the masala ingredients powdered and kept ready for lunch box variety rice dishes .before hand .   1. in a pan first roast chana dal, split udad dal, red chillies, coriander seeds, asafoetida powder , and some sesame seeds with a tsp or two of sesame oil .
  2. roast all these without burning and just before removing from gas, add the dessicated coconut powder , and remove quickly before it gets browned too much .allow these to cool .
  3. powder the roasted ingredients to a little coarse powder. store this powder after using required quantity for making capsicum rice for other variety rice recipes .
  4. now talke a pan , add some sesame oil , add mustard seeds fore tempering , add split udad dal , allow to get golden clur, add some curry leaves, add the chopped capsicum pieces.
  5. add salt a bit at this stage and adjust later after mixing rice .
  6. try to cook the capsicums without adding water, so that it retains a crunch after preparing the dish , as capsicums have water comtent , it is enough to cook them . better to stir fry if possible .
  7. add the required amount of powder that we prepared , adjust salt , add the cooked fluffed basmati rice or plain rice , and toss gently without breaking the grains .
  8. garnish with coriander leaves.
  9. capsicum rice makes an excellent breakfast , brunch or lunch box dish too , can serve with a cold raita .
