Ceylon Kootu is a delicious coconut milk gravy dish laden with choicest vegetables, mildly spiced , and the only highlighted flavour and aroma of thick coconut milk coming to the fore . I love to prepare this dish as it can be made quickly, with some left over lone vegetables, all it needs green chillies and coconut milk . we always have the masala at home so a few cloves, bay leaves, cardamom , cinnamon is enough to prepare and no grinding work involved unless you want to extract the coconut milk the old way, by scraping , grinding three times to extract three qualities of coconut milk

I have used a branded pack of coconut milk and it is good enough .

Instructions
  1. In a pan add some coconut oil , fry the spices first , add the onions, and saute well ,add green chillies , curry leaves .
  2. add all other vegetables one by one , and sauteing well in coconut oil ,first with onions , tomatoes, then the others .
  3. add the thin coconut milk first, to help cook the vegetables, as this gives the flavour to vegetables so dont add water .
  4. cover and cook on medium heat with salt ,
  5. occasionally , stir in between , and when vegetables have softened, reduce flame to lowest , add the thick coconut milk . after adding thick coconut milk , stir well and dont allow to boil or else the mixture will look curdled . add 1 tbsp rice flour mixed with coconut milk and water to the mixture to get little thickening .
  6. switch off flame immediately . After adding coconut milk, dont allow to cook, it will mix well in the residual heat itself.
  7. garnish with curry leaves ,serve this yummy most aromatic dish with idiappam, chapatis, pooris, aapam.
