There are two recipes in this one video 😊😊 given below,  one is a flavorful chutney powder ( masala powder / curry powder ) which can be made in bulk and used in various dishes like curries, esp roasted potato curry , gravies , kootu varieties, sundal varieties and also some chutney varieties . One of my favourite is the kaara chutney 😋😋 which becomes very tasty after adding this powder .

The other recipe is for a home made chutney mix / paste to prepare instant kaara chutney in which i usually add the above powder as needed . This is my ready to make chutney paste .which i make in bulk ( not more than 2 bottles at a time ), to store and / or carry with me when i travel to go with my idlis , dosa, other tiffin varieties which i prepare from my various mixes , pongal mix, idli mix, dosa mix, uthappam mix, khichdi mix , other rice varieties . I used to carry various chutneys in powder forms , now i prefer the moist chutney in the form of chutney paste , which has more flavour and more depth , good texture . . So use as needed from a single serve . As this may be concentrated and very strong in flavor , you can dilute with warm water and serve .Furthermore These ready to use chutney in bottles can be safely carried too .

A delicious handy chutney mix with tomatoes and onions and a spicy powder with multi uses. Prepare in bulk and have chutney when ever you want for idli, dosa, pongal . This basic chutney powder can be used to flavor many dishes like potato curry and other dry sabjis, in kootu, curry varieties , sundal varieties , as you wish , basically an aromatic flavorful masala powder , you can use as required , do not add all the powder in the recipe as it may become too thick , This home made kaara chutney paste recipe is very handy to have in fridge , useful while travelling and sgtays good for a fortnight . you can use as much as needed , dilute a bit with warm water and instant kaara chutney is ready to go with your daily tiffin . very useful for the working mom , bachelors and those travelling .

Instructions
  1. Roast all dry ingredients for the chutney powder , coriander seeds, cumin , chana dal, red chillies, asafoetida powder , split udad dal , with little oil , keep aside to cool .
  2. powder the roasted ingredients in a mixie to very fine texture . keep aside covered till needed
  3. blend to a fine paste chopped tomatoes, onions, coriander leaves, tamrind without adding water .
  4. take a heavy pan, add sesame oil , splutter mustard seeds, add curry leaves .
  5. add the ground paste , keep flame on low, stir well , add turmeric power, salt , the chutney powder that we ground , about 1-2 tsp or as needed . keep the balance powder for future use in other recipes .
  6. cover and cook till the mixture thickens and oil separates ,
  7. remove and allow to cool
  8. this thick chutney paste is the concentrated form of kaara chutney
  9. before serving ,take out required amount of chutney paste , add few tbsp of warm water, dilute and serve as spicy tangy kaara chutney .
  10. this concentrated form of chutney paste is very useful for journeys, so keep stored in a glass jar in the fridge .
