This is a healthy pasta made only with green soya beans . Proteins loaded and full of fibre and lowest carbs this healthy dish is hard to resist . Soybeans is one of the most popular versatile foods . They are processed into a variety of foods like soy protein, tofu, miso, natto , and tempeh .

Basically Edamame beans are whole immature soybeans also referred to as vegetable type soybeans .

They are green in colour and differ from regular soybeans . Traditionally they are shelled and added to soups stews , noodles or even eaten as a snack . It is high in protein , a cup of cooked edamame about 155 grams provides around 18.5 grams of protein . It is also said to lower cholesterol , super rich in healthy fibre , antioxidants and vitamin K . It doesn’t raise blood sugar , low in carbs , and an excellent addition to a low carb diet .

It  is rich in vitamins minerals and may reduce risk of breast and prostate cancer . Helps in strengthening bones and helpful to deal with menopause . Edamame is a tasty  nutritious legume.

Edamame spaghetti with avocado pesto
Instructions
  1. Cook the edamame spaghetti in a pot of hot water with a tsp of olive oil , as per instructions on the pack . Pinch of salt maybe added .
  2. Edamame spaghetti usually cooks faster so keep an eye as you don't want them soggy . Drain and keep aside .
  3. To make pesto, add avocado sliced , pine nuts , cilantro leaves , some baby spinach leaves , some basil leaves , garlic and lime juice , blend to paste . Keep aside .
  4. In a pan add olive oil , toss veggies , cherry tomatoes , some chopped spinach leaves , add the cooked edamame spaghetti, add the pesto , mix well . Add green chilli paste . Add salt as required .
  5. You can serve this with some crumbled cheese or toasted tofu . Enjoy !
