My home made Mysore bonda mix , has no maida , no baking soda ,that is just a mix of flours, and handy when I don’t want to grind , which i carry while traveling  . This is an excellent method  for  small kitchen , bachelors cooking and requires no  grinding . Another recipe for the ready mix collection .

A quick method to make and enjoy Mysore bonda by mixing flours and using no maida or soda.It makes a good recipe to prepare a travel mix which you can carry .

Instructions
  1. mix the udad dal flour, ( rice flour will be added just before making vadas /bondas )with just enough water to make smooth thick batter just like vada batter, but whisk well to remove lumps
  2. then add the day old yogurt, give a good stir. allow this batter to rest for some time,( baking soda will give instant rise, but we are skipping that ), ( may take around 3-4 hours ) for batter to get a small rise, it gets little fermentation on addition of yogurt .

  4. mix batter well, till light just like we do with ground vada batter, then add the rice flour just before shaping bondas. add necessary chopped chillies, curry leaves, coriander leaves, coconut .
  5. heat oil, make small rounds of the batter with wet hand or with a spoon and drop in hot oil keep at medium heat and fry just like medu vads, till little darker, keep turning over in oil for uniform cooking .usually Mysore Bondas are not shaped but just balls of batter dropped in oil .

1..after 3-4 hours if batter appears to be same thick and pasty, it means its not ready for dep frying .

2..although it means a little waiting for fermentation , the advantage of this method, useful for travellers, you need to carry only udad dal flour which is available everywhere .

2...no addition of baking soda or baking powder , and so moms can give to their kids without worrying bout adding baking soda..as we use only yogurt ..

3...you can make your own Mysore bonda mix or vada mix by this method. and keep stored in your kitchen .

4..this recipe works well, when mix is prepared overnight .and you need to make bondas first thing in morning for breakfast to serve with idlis etc .but make sure to avoid over fermenting .

take some quantity of udad dal flour, necessry rice flour in proportion ...add roasted green chillies, crispy curry leaves, fried onions ( optional) , asafoetida powder, crushed pepper, coriander powder , salt and keep this mix , or pack this with you , make vadas anytime , by adding yogurt to ferment .

One more mix to add to your travel collecion of recipes of food mixes..
i love such recipes as i can have vadas/ bondas when ever i want and not buy the mix outside on account of unnecessary additions in the ready made vada mix .

all tried tested many times in my place and no one guessed .;-)
