Kalkandu Pongal Recipe| Sugar Candy Pongal Recipe
Delicious pongal made using sugar candy/rock candy and milk with just flavors of cardamom and some hints of saffron , garnished with ghee fried cashew nuts .One of the many sweet dishes prepared during Pongal festival and also during the month of Aadi as one of the several sweet preparations made every Friday during the month .

Instructions
  1. Measure 1 cup rice , wash it well , add to cooker .
  2. add 2 cups milk and one cup water , pressure cook for 2 whistles or till it cooks to soft consistency .
  3. meanwhile melt the sugar candy by adding little water and heating till it is dissolved and appears to thicken, no need for string consistency . Filter the sugar candy syrup .
  4. open the cooker , after it becomes cool , mash the rice inside with a ladle, add it to another pan or continue to cook in the cooker vessel itself,
  5. add the melted sugar candy syrup, add the pinch of cardamom powder .At this stage you can add more thick milk for extra creamy texture .
  6. allow the kalkandu pongal mixture to cook on a medium heat , cover and cook , as it may splash while bubbling .
  7. keep stirring occasionally while the kalkandu pongal is cooking and getting thickened .
  8. add saffron strands for added flavor and aroma,
  9. in a ladle, add some ghee and fry cashewnuts till golden , add this to the now thickened kalkandu pongal ,
  10. The kalkandu pongal is now ready , once the consistency has thickened .
