Yet another simple delicious one ingredient variety of dosa with just rice as the main ingredient and no udad dal , less soaking and grinding time and no fermentation . This dosa variety falls in the almost forgotten category of traditional parambariyam ( ancient ) recipes of Tamilnadu . It was taught to us by Grandmas and passed on to their daughters, with course of time , how ever this simple variety of dosa and many such dishes have almost vanished from many kitchens as not many seem to like this dosa .

how ever at home i make several variety of dosas depending on time and available ingredients, this recipe comes to my rescue when i havent planned for any kind of tiffin for afternoons and there is a pang of hunger.

A traditional almost forgotten dish , kali kanji dosai or rice porridge dosa is a very authentic traditional recipe from Tamil almost akin to the famed Neer dosa in looks and texture, this koozh ( porridge ) dosa is very easy to prepare the same day , makes a good lunch box dish too as it remains soft through the day ...It is the simplest one ingredient recipe using only raw rice , to washed , soaked for 2-3 hours .

Instructions
  1. wash and soak the raw rice for about 2-3 hours grind to a very smooth thick batter
  2. take about two ladles of the batter in another essel add enough water about 3 cups to dilute further to prepare a semi thick porridge of pour able consistency .
  3. allow the vessel to remain on gas o a very low flame , keep stirring to avoid lumps in porridge . removal from flame when porridge looks shiny and cooked .
  4. allow porridge to cool completely , add to the raw batter that we kept aside . add salt , coriander leaves, chillies this batter can be tempered with mustard seeds as well
  5. mix well and prepare the thin dosas if the dosas cannot be prepared well , just add 1-2 tbsp of raw rice powder to adjust consistency of batter . add lime juice which is purely optional to the dosa batter if you wish .
