Mexican rice is a wonderful one pot meal with long grained rice, vegetables of choice like peas, corn , onions, garlic, spiced with jalapenos, some cumin . Here i have substituted with brown rice which makes it even more healthier and packs awesome flavors . You can try with basmati rice too .

Ingredients
- 2 cups tomato puree
- 1 nos onion finely chopped
- 1/2 cup finely chopped tomatoes
- 1 tbsp tomato paste
- as needed salt
- 1/2 tsp cumin powder
- 1/4 cup olive oil
- 1.5 cups long grained rice or brown rice
- 2-3 nos finely chopped jalepenos
- 4-5 nos garlic cloves minced
- 1/4 cup finely chopped cilantro
- 1 tbsp lime juice

Instructions
- Wash the rice in running water for 1-2 minutes and then soak for 30 minutes .
- Make a puree of the tomatoes in a blender with the chopped onions .add salt , cumin and boil this mixture in a pan . keep it aside on a low flame and keep it bubbly till you process the other ingredients .
- In another pan , add oil , heat it , add minced garlic, finely chopped jalapenos, tomato paste , add the soaked drained rice and roast it well ,Sautee for 5-6 minutes.
- Add the tomato puree onion mixture that we cooked earlier in a pan , add additional water and chopped tomato pieces , cover and cook till rice is cooked and all the liquid has been absorbed . .this may take about 12-15 minutes over a stove top , this rice can be cooked faster in a rice cooker or in a pressure cooker .
- Allow to cool and add lime juice, fluff gently with a fork and serve with cilantro garnished liberally. Adjust the taste of salt and spice as per your needs. Lime wedges can be served with the dish .
