MEXICAN RICE

Mexican rice is a wonderful one pot meal with long grained rice, vegetables of choice like peas, corn , onions, garlic, spiced with jalapenos, some cumin . Here i have substituted with brown rice which makes it even more healthier and packs awesome flavors . You can try with basmati rice too .

Mexican rice also makes a good lunch box recipe as it is easy and and prepared in a pot

MEXICAN RICE
A delicious one pot meal of long grained rice, with tomato, and some veggies and spices that is so Mexican and goes with many Mexican dishes.

Instructions
  1. Wash the rice in running water for 1-2 minutes and then soak for 30 minutes .
  2. Make a puree of the tomatoes in a blender with the chopped onions .add salt , cumin and boil this mixture in a pan . keep it aside  on a low flame and keep it bubbly till you process the other ingredients .
  3. In another pan , add oil , heat it , add minced  garlic, finely chopped  jalapenos, tomato paste , add the soaked drained rice and roast it well ,Sautee for 5-6 minutes.
  4. Add the tomato puree onion  mixture that we cooked earlier in a pan , add additional water and chopped tomato pieces , cover and cook till rice is cooked and all the liquid has been absorbed . .this may take about 12-15 minutes over a stove top , this rice can be cooked faster in a rice cooker or in a pressure cooker .
  5. Allow to cool and add lime juice, fluff gently with a fork and serve with cilantro garnished liberally. Adjust the taste of salt and spice as per your needs. Lime wedges can be served with the dish .
