Pakatale Millet rava ladoo / or millet ladoo mixed with sugar syrup and shaped is a great alternative to semolina .

This can be made in minutes and very useful for sharing during festival times, or  to give to kids for school snacks also.

Millet rava ladoo follows the exact procedure that is usually followed for making rava ladoo , semolina ladoos by Maharashtrians . I decided to use millets for a change as semolina ladoos are made so often for festivals and I am trying to use millets in many dishes.Known popularly as Pakatale Ladoo , or Ravyache lad.

Some suggestions for more variations , using milk powder also , or mawa , or coconut , will result in yummier , richer ladoos .This time i kept it simple . The taste was totally out of the world and dont go by the  pale colour, it is the taste that comes uppermost  when you sink your teeth in the soft melt in the mouth good ness.

I chose kodo millet , as i find it very easy to use and it works well. You can also choose a mix variety of millets and make it even more healthier . You need to clean the millets , of dirt and small particles if any , dry grind in mixer till very fine like chiroti rava , should be super fine , so you may have to do it in batches .

Delicious millet rava ladoo for this Diwali , healthy and yummy . you will hardly see the difference in the taste , it is equally melt in the moth and prepared the same way as Ravyache ladoo , pakatale rava ladoo

Instructions
  1. first fry the cashewnuts and raisins in 2 tsp of ghee , keep aside.
  2. In the same pan , now roast the millet rava slowly on a a very low flame adding more ghee ( use up left over ghee while roasting )
  3. Roast till a fine aroma emanates. Keep the roasted millet rava aisde.
  4. Now prepare the sugar syrup , by adding the sugar in a pan , add water just enough to cover , and allow to form a single string consistency
  5. You have to be careful not to cross the stage as it will become hard . mix in the roasted millet rava , cardamom powder , fried cashew nuts and raisins, , mix well with ladle,switch off gas also , and cover with lid immediately .
  6. You will see the consistency of the ladoo mixture appears very loose and that is perfectly fine . after covering and allowing to rest for at least one hour
  7. after one hour ..open the lid .you will see the mixture has become very firm on account of the sugar syrup and would appear to be set in the pan , but it will come off easily by scraping or mixing well . now crumble the mixture , and start shaping the ladoos .
  8. Tips if you find it difficult to shape ladoos because the syrup turned hard, not to worry , keep on sim gas for a minute ,sprinkle some hot water allow the mixture to loosen a bit and start working on the shape of ladoos. This is a very simple recipe and yoou cannot go wrong . It is made just like the rava ladoo in sugar syrup .
