PANIYARAM PAN BONDA, NON FRIED BONDA

Very often I make these non fried bondas using bread slices and some mashed potatoes .

Bread bonda or batata vada ( tasted like the vada used in vada paav . I used some left over bread slices , mixed green chillies ginger , red chutney powder , salt , hing , mashed potatoes . Made a smooth mixture , rolled into smooth balls dipped in thin chick pea flour batter / besan , made as bondas in paniyaram pan with just drops of oil .

Tasted super yum . Makes a great evening snack for kids too .

Just make a thick mixture of mashed potatoes and crumbled bread with spices you like I added ginger green chilies paste coriander leaves salt hing and a red chutney powder ( store ) as I felt it wasn’t spicy enough .

Add tbsp of water little by little to make small balls of the mixture .then dip them in a besan flour batter , and place in the paniyaram pan by adding drops of oil in each cavity .

Let flame be medium then reduce to low meanwhile keep turning over for even cooking . Use a spoon to turn over . You can add soda to batter but I did not add soda , hope it’s clear .

I used about 6 slices of whole wheat bread , cut the edges to keep only brown part , crumble with fingers till it resembles powder like .

To this you add mashed potatoes about 3 medium well cooked potatoes .

My bread was getting dry so I decided to make this bonda . It can be used to make vada paav . Garlic paste can also be added .

A delicious afternoon tea time snack making bread bonda in appe pan / paniyaram pan , making non fried yummy snacks using left over bread slices.

Instructions
  1. remove bread crust , make a crumble mixture of the bread, add the green chillies, ginger paste , chopped coriander leaves, salt , asafoetida powder , turmeric powder.
  2. before adding drops of water, mix well with fingers as all ingredients must bind well, then add drops of water at a time , till you get a smooth ball of the mixture.. make small balls out of the above, just enough to fit into the paniyaram cavity ..
  3. prepare the besan floour batter by adding pinch of salt , 1-2 tsp rice flour , make a batter which must be little thin . heat the paniyaram pan, add drops of oil in each cavity , dip the bread potato mash ball into the besan flour mixture, place it in the paaniyaram pan, one in each cavity, keep flame medium initially , then lower , keep turning the bread bonda in each cavity with a spoon so that all sides cook well,
  4. turn carefully as the besan cover is likely to peel off if turned before getting cooked ..as unlike in frying , in paniyaram pan , we dont have enough space to handle each bonda..
  5. you will see a uniform crispy look in each bonda,
  6. remove and serve with any chutneys or have it with paav as a vada paav with spicy red chutney powder.
