Poricha Kuzhambu …😋😋a yummy one pot meal with mixed vegetables and lentils, prepare the powder ahead and save time of roasting and grinding every time .Poricha Kuzhambu / Porita Kuzhambu ,  a classic Tambram dish from Tamilnadu , a preferred dish for the days when elaborate cooking is not called for yet a satisfying meal is done all in a pot / pressure cooker or on a stove top in a pan . A Delicious blend of aromatic southern spices, sharp taste of peppercorns , cumin and aroma from roasted udad dal and the spice from red chillies all come together with cooked dal and a mix of vegetables . So what more do you need to complete the meal of lentils, vegetables and steamed rice ? A crispy rice appalam/ arisi appalam is all you need to devour the dish .

It has always been my preferred meal when I decide to eat more steamed rice as this poricha kuzhambu will taste at its best with only rice . I  skip making the daily sambar or kuzhambu when I opt for poricha kuzhambu . Two dishes that I cook very often and when I have some assorted lone vegetables in the basket is  the avial, or poricha kuzhambu . It is tough to chose between the two as both are very flavorful and filling . Depending on the choice of vegetables I decide .

As I make it pretty often , I need to quicken my cooking too , so I prepare a stock of poricha kuzhambu podi, which is all pre roasted, ground  , stored in an airtight container .and one needs to just add the quantity needed with or without coconut .

I have given below in the video  a recipe for a bulk mix , and you need to measure out the tbsp needed to make your poricha kuzhambu .

To prepare a travel mix :

Add coconut milk powder to the mix and roasted fried gram dal powder ( to replace cooked dal ) to the prepared kuzhambu powder , some dry roasted curry leaves and roasted tempering of mustard seeds, chana dal , red chillies , also to the mix , simply add required mix to the vegetables, microwave or pressure cook . helpful for travellers, bachelors and even at home to save time .

Store the prepared mix in airtight container , will stay good for a month and longer if coconut milk powder is not added to the mix for home use , but for travellers and bachelors living out of home , this is a good mix to prepare and carry with them on their trips .

For a traveller...

Just add the prepared Poricha Kuzhambu mix to a cup of assorted vegetables,little water , salt ,  microwave or pressure cook ., add salt . Enjoy with steamed rice..😋😋

You can scale up in proportion to make a bulk mix of this powder to save time of roasting and grinding the powder every time you want to make poricha kuzhambu .

  1. In a pan add some sesame oil , roast the udad dal, pepper,rice, cumin seeds , a pinch of asafoetida powder , till aromatic along with red chillies till they become crisp. This step can be skipped if you have already prepared the poricha kuzhambu powder in advance .
  2. allow the roasted ingredients to become cool, then powder them in a mixie and keep aside till needed .
  3. grind coconut separately , keep aside .
  4. add some chopped vegetables to a cooker pan, add little water, turmeric powder, salt and some curry leaves.
  5. add 1-2 tsp of the prepared powder . Mix well . add some cooked toor dal about 1/2 cup , mix well .
  6. close cooker , and allow to cook till 3 whistles .
  7. when pressure has subsided, gently stir, add ground coconut paste , add more curry leaves, add little more water if needed, allow to boil gently for a minute . add little more poricha kuzhambu powder if needed .
  8. add the tempering of mustard seeds, red chillies, chana dal in sesame oil and pour over the prepared poricha kuzhambu , check for salt and make adjustments .
  9. enjoy with steamed rice and appalam .
