POTATO SAAGU

Potato saagu, Bombay saagu is a delightful simple side dish that is served with Rava  idlis in many restaurants in Karnataka  .I used to make this dish without knowing that  it was accompanied with rava idlis, at home it made an excellent emergency side dish for chapatis, or pooris. Until I got the opportunity to have it as a side dish with rava idlis too. I must admit it  does go well with rava idlis and chutney . As simple as the ingredients and dish sounds, it is even more delicious and makes an excellent side dish for many tiffin items .Potatoes, onions and tomatoes are basic vegetables in most homes available though the week as they seem to form the base for many dishes . So a quick potato saagu is made easily without any planning .

This s a simple handy recipe for bachelors who do not want elaborate cooking .

A delicious side dish of potatoes served with rava idlis , also called Bombay saagu . Makes an excellent side dish for rotis, pooris .

Instructions
  1. Pressure cook 3 peeled potatoes and mash them well after being cooked .Keep aside . Heat a pan , add some oil .
  2. Splutter mustard seeds, add chana dal, cumin seeds, green chillies and ginger. add some curry leaves .
  3. Sautee well chopped onions till translucent, add chopped tomatoes, add turmeric powder, hing , salt .
  4. Next add the mashed cooked cooled potatoes, add little water, salt . Make sure the mixture cooks with little water as it is likely to thicken .
  5. When the mashed potato mixture has blended well with the onions and tomatoes , add little besan flour mixed with water to the cooking mixture, reduce flame and allow to boil for 1 minute . Garnish with chopped coriander leaves.
  6. Serve Potato saagu with pooris, chapatis or rava idlis .Tastes good even with dosas.
