This is one of our preferred breakfast dish many mornings and sometimes even for brunch . when chopped vegetables are added , it makes it even more filing . Serve with sambar or coconut chutney for the complete enjoyment of the khichdi .i make it so often and at any time when we need a quick unplanned tiffin , I  have even prepared a khichdi mix, which I  will detail below ..having the khichdi mix at home , is very useful as it saves precious time in prepping , you can simply start right  away . The khichdi mix is a travel buddy too , and helps us when we dont want to eat hotel food or need good food immediately . As it can be microwaved and served, and as most hotel rooms come with microwave , this mix is yet another travel friendly recipe .

A complete meal with loads of vegetables and light on the tummy . makes an excellent meal option ideal for all age groups .( serve with extra ghee for kids .)

A convenient way to make a bottle of ready to cook rava semiya khichdi mix for quick breakfast , lunch box , saves time and effort in busy hours , particularly useful to those travelling , on roadtrips , for the elderly who cannot stand for long in the kitchen .

Basically a dump contents in hot water and cook recipe as all roasting tempering has been done ahead , dehydrated veggie mix can be added for those travelling and unable to cook in kitchens all you need is a microwave .

Those at home will also find it extremely time saving to make quick breakfasts while you are busy cooking . Useful to send with your kids going abroad , for dorm students and those in motels .

HOW TO PREPARE THE MIX :

Take required quantity of semiya/ vermicelli and sooji, dry roast separately till light brown . add preferably roasted tempering of mustard seeds, udad dal, red chillies, cumin , hing powder, cashew nuts ad roasted dry curry leaves to have long shelf life

add some dehydrated veggie mix for those travelling and not having access to full kitchen .mix all ingredients well, store after cooled, in a glass jar , can be stored outside for upto 3 months .

to make quick khichdi with the mix ..

take a measure of the prepared mix, heat a pan, add 2 tsp ghee or oil , add 2 measures boiling water,

add the khichdi mix, adjust salt if no added to mix, cover and cook for 3 minutes, when water is completely absorbed, fluff with a spatula gently , garnish with coriander leaves, add more ghee for serving ( optional )

serve with chutneys or sambar . this quick khichdi can be done faster in microwave .too . this pre mix recipe is a boon to travellers, and elderly .

Instructions
  1. In a large pan roast the sooji, vermicelli, with a tsp of ghee till a fine aroma wafts . ( even if using pre roasted, roast it for few seconds with ghee
  2. remove above and keep aside, in the same pan add oil , splutter the mustard seeds Add chana dal, cashew nuts, udad dal, let them turn golden , add ginger,green chillies, curry leaves, turmeric powder,
  3. Add the chopped onions, sautee well till onions look transparent , add tomatoes, and rest of vegetables. Add just enough water to cook this vegetables , add salt , asafoetida powder , cover and cook to speed up cooking of vegetables
  4. meanwhile keep some boiling water ready , about 4 cups ( should be very hot and boiling ) . Within 2-3 minutes, when vegetables seem soft, add the boiling water, and now let this boil well with all vegetables.
  5. Now slowly add the rava vermicelli mix , slowly while stirring the boiling mixture with other hand , in circular motions, at this point reduce flame to prevent lumps. After adding all the rava and semiya, stir once, cover and cook on a low flame , check for salt , adjust .within 2-3 minutes the water would have been absorbed completely and , add 1-2 tbsp ghee, some coriander leaves to garnish, mix well.
  6. Serve hot with coconut chutney or any side dish of your choice. notes :
  7. khichdi is usually prepared with a generous tbsp of ghee in tempering and also while roasting rava semiya, and a little after its done..about 3 tbsp in all. cashew nuts is usually added in khichdi, optional though .
