When the mango season has just begun and there is a profusion of raw green mangoes in the market , it is a good idea to try some green mango rice, also called mangai saadham , maavnkayi chitranna in Kannada . it make a delicious tongue tickling rice dish good for a lunch box  for office or school . Just like the lemon rice , this mango rice is a notch higher in taste and flavor on account of the fresh raw green grated mango used in the dish .

I  usually prepare a big bottle of the mango rice mix and store in a bottle to make it weekly during the season just to save time on grating and seasoning every time. by making the mix in advance, all you need to do is to mix with hot rice and serve immediately . Lets get to  the simple recipe.

Instructions
  1. grate the raw mango .
  2. in a pan add, some oil , let it heat up .
  3. splutter mustard seeds, add split udad dal, chana dal ,fenugreek seeds. let them become golden . add peanut or cashew nuts if you are adding some .
  4. add curry leaves, green chilies,turmeric powder,
  5. add the grated mangoes. add the asafoetida powdr .
  6. add salt, stir mixture well .
  7. stir for 2-3 minutes till the raw mangoes looks tender and cooked. Remove and cool well .
  8. At this stage , you can store this mix in a bottle and prepare the mango rice when needed . This prepared mango rice mix comes very handy for making lunch box dishes .
  9. to prepare raw mango rice, add some cooked cooled fluffed rice to the mango rice mix, stir well so that the mix coats the rice grains well. serve with papad or wafers.
