Thandai cake ( pressure cooker method )

I used my basic cake pre mix powder that i keep in stock to make any basic cake. The recipe has been given below . Given below is a recipe to make Thandai powder .

 

Ingredients to make thandai powder

1/4 cup almond sliced ( xan use whole too )
1/4 cup cashew
1/4 cup pistachios
8 cardamoms
1/4 tsp pepper
2 tbsp sugar
1/8 tsp saffron
1 tbsp melon seeds
2 tbsp poppy seeds ( khus khus)
1 tbsp fennel / saunf
1/4 tsp nutmeg grated
1 petal mace

blend all the above to a powder .

Making thandai powder and ingredients for the same , as described in recipe above

step 2..making cake batter with cake flour, thandai powder and gulkand , along with sugar, oil , buttermilk mixture

blended yogurt , oil in mixie jar and the added to cake flour

preheated cooker , batter poured into a greased lined cake tin

cooker covered with lid, without gasket and whistle ., initially high heat for 3 2-3 minutes then lowered and baked till done

remove cake from cake tin , allow to cool , then turn upside down , remove the butter paper gently , place cake on a plate

most delicious thandai cake is ready , garnish with cherries or any fruit, sprinkle thandai powder on top

Instructions
  1. Preheat the heavy pressure cooker pan in which you will bake on gas stove , after layering with salt and placing a heavy plate or stand inside, cover with lid and preheat on high for 5 minutes on high till you prepare the batter .
  2. in a bowl add the oil / melted butter , , powdered sugar add buttermilk , and blend all three well .mix mawa separately with milk , add that to t he mixture above .
  3. in another bowl, take a sieve and add the flour , baking soda, baking powder, sieve all , add the gulkand, and thandai powder , next add this to the wet ingredinets mixture we prepared , make a semi thick batter, adjust consistency with buttermilk
  4. makea semi thick batter, adjust consistency with buttermilk .the batter should be of dropping consistency , not loose . grease a lined cake tin , pour batter into the tin , tap well,to remove air bubbles, place it in the pre heated pressure cooker pan , close with lid, without the gasket and whistle. and place inside the heated pan . Cover with a lid , let the gas flame be reduced to medium initially then to low till end of baking .to low ...
  5. the baking time on gas stove will be around 25- minutes, when the top appears firm, and lightly brown, the cake begins to show signs of leaving the sides , its an indication the cake is done , check with a tooth pick to see if it comes out clean . remove the cake tin , allow to cool on a rack . run a knife around the side, and remove on to a plate .
  6. decorate with cherries, thandai powder.
