Tomato rice bath , or tomato rice is another easy lunch box dish you can prepare in a jiffy for busy mornings, or for brunch , as an additional dish for your pot luck parties .

This is yet another popular rice dishes from Karnataka side where many such variety of rice bath is served for breakfast also . Popular rice dishes such as capsicum,tomato, brinjal are very popular as morning dishes . This can be served with pickle, or some kind of raita and papad . Although basmati rice is not needed , i love to have it with basmati rice as it becomes so fragrant . Usually left over rice is used to prepare such dishes, as the rice is perfect , non sticky . To get the perfect long grainy rice, make sure to keep the basmati rice soaked for at least 20 minutes and you will be delighted to see the outcome , as you can see in my video too .

Delicious easy lunch box recipe, tomato rice baath is very popular in Karnataka and other southern regions as a breakfast dish or as a lunch box dish . It is very easy and quick to prepare , in a cooker within 15 minutes and makes it very filling too . This is an excellent dish for those who are busy and need a quick meal in a pot without too much fuss and effort .

Instructions
  1. Wash the basmati rice well and keep soaked for 15 to 20 minutes.
  2. meanwhile take a pressure cooker , heat it , add a tbsp of ghee to the cooker vessel, add in cumin seeds
  3. add all whole spices, green chillies.
  4. add chopped onions and allow to fry till translucent
  5. add the chopped tomatoes, salt , turmeric powder, chili powder and mix well .
  6. add the drained basmati rice , add 1.5 cups water , mix well, and stir gently after adding rice .
  7. pressure cook for one whistle .
  8. allow to rest pressure cooker and let it release pressure naturally .
  9. open cooker to see the perfectly cooked tomato rice , with long non sticky grains . Fluff gently with a fork . garnish with coriander leaves and serve with papad or raita, lime pickle or any side dish of your choice .
