Varutharacha kuzhambu or a gravy prepared without using cooked dal as in regular sambar , but using only roasted coconut and few ingredients makes an excellent alternative to the daily routine of rasam, sambar esp in Tamil households . This is made using drumsticks, brinjals or pumpkins with one or few vegetables .

When you want something different to mix with rice instead of the usual daily dal | parup sambar or rasam , , varutharcha kuzhambu is the best bet . 😋😋simplest ingredients , no dal , just coconut and few ingredients to grind with , and a delicious kuzhambu with veggies of your choice .is ready . The main flavor comes from roasted ground coconut so you cannot skimp on this and expect a good tasty kuzhambu .

Instructions
  1. in a pan add some coconut oil just enough to roast the toor dal, red chillies, rice, curry leaves and asafoetida powder ,
  2. separately roast the coconut till aromatic
  3. when cool grind the roasted ingredients with coconut to a fine paste , keep aside till needed .
  4. in a pan cook the pumpkins or any vegetables you are using with little salt and turmeric powder
  5. when vegetables are half cooked add the tamrind water , cover and cook till raw smell of tamarind is not present .
  6. add the ground paste and mix well .
  7. allow the kuzhambu to boil gently on very low flame after adding the ground paste . switch off the gas when few bubbles appear .
  8. prepare the tempering with coconut oil , splutter mustard seeds, red chilly , more curry leaves and pour into the varatharacha kuzhambu
  9. serve with rice and pappadam .
