Delicious wholewheat honey bread that is so much more healthier than full white flour bread, you will love the crumb and texture of how this bread feels and tastes with a mild sweetness of honey , which can be skipped if not wishing to add any sweetener to bread . a dash of sesame seeds or even oats o top of the bread gives it a most appetizing look . This is my go to recipe for a simple no frill under 2 hours bread , yes that is all it takes, no repeated resting or proofing , as the long kneading does the job well . believe me 50 to 60 turns is really no big work, it sets a cool rhythmic action that calms you too ! to me this is a workout for my tired fingers and palm !

Instructions
  1. Take a large bowl, add yeast , sugar , warm milk , allow the mixture to activate . then add other ingredients except the last mentioned 1/4 cup flour , if using mixer, beat on high for 2-3 minutes . if using hand , beat with a spatula, keep mixing the rough dough mixture till it almost comes to a ball .
  2. finally before removing dough from the bowl , add in the last 1/4 cup flour to help forming the dough ball .
  3. now take it to a floured surface and tip the bowl, start kneading and folding the dough at least 40 to 50 turns . This turning the dough to nearly 50 times is very important in getting a good soft textured bread .
  4. allow the dough thus formed to rest for 20 minutes .
  5. after 20 minutes, again knead dough couple of times , after resting , the dough will be much easier and non sticky to handle , so now shape into a loaf according to your bread pan , by simply patting the dough into a square, even thickness, roll up , and tuck both ends tautly, and pinch seams at bottom so that the top looks smooth and no wrinkles . brush the top of bread lightly with water, sprinkle the sesame seeds , and allow to rest for 30 minutes .
  6. the dough should have risen a little above the bread pan but not too much or else it will collapse during baking
  7. preheat oven to 180 degrees C , and bake bread till golden brown, may take about 25 minutes depending on oven type
  8. midway during baking , you can cover the loaf with aluminium foil on top to prevent too much browning or shift bread to lower rack
  9. remove bread when it is done , and allow to cool on a rack for an hour at least before you slice .
