ZUCCHINI RICE ( BROWN RICE ) VEGAN LUNCH
A healthy delicious way to have vegan lunch by making zuccini rice using brown rice.
Instructions
  1. Keep brown rice soaked for at least 15 minutes to get best results .Cook rice in rice cooker or pressure cook with just enough water to cook it till fluffy , not overly cooked .
  2. When cooled , remove and fluff with a fork to get separate grains . add butter to do this
  3. Meanwhile in a skillet add butter, add garlic, chopped chillies , (use jalepenos .) saute, add cumin seeds, add onions, sautee till transparent , add the corn kernels, cooked chickpeas if using , grated zucchini, toss well, add salt and white pepper powder, remove and add lime juice.
  4. Add the cooled rice to this and mix well . Garnish with cilantro leaves and enjoy .
