Aval Paal Kozhukkatai

There are some prasadams that instantly take you back to your childhood kitchen - the aroma of melting jaggery, fresh coconut milk simmering on the stove, and tiny white pearls floating . Unlike the traditional rice flour version that needs careful steaming, this easy Aval or Poha version is a boon for busy days and last-minute festivals. No cracking, no hard balls, just incredibly soft, smooth, pearl-like kozhukattais that literally melt in your mouth, drowning in a creamy, fragrant bath of thin and thick coconut milk sweetened with jaggery.

I first saw this Chettinad-style version shortcut at home by my mother during Gokulashtami. She would say, "Kozhukattai should be as soft as Krishna's butter." And with aval, it always is! Ground aval powder binds beautifully with just hot water - no need for endless kneading.

Festival Prasadam for Krishna Jayanthi / Vinayagar Chaturthi

Ingredients

For the Kozhukattai Balls:

  1 cup White Aval / Thick Poha (not red aval)

  1/4 tsp Salt

  3/4 to 1 cup Hot boiling water - as needed

For the Paal (Coconut Milk Jaggery Mixture):

  1 cup Powdered Jaggery / Vellam

  1/4 cup Water to melt jaggery

  2 cups Thin Coconut Milk (2nd & 3rd extract)

  1 cup Thick Coconut Milk (1st extract)

  1 tsp Rice flour mixed with 2 tbsp thin coconut milk - for thickness

  1/4 tsp Cardamom powder

  Few Saffron strands - optional

  1 tsp Ghee - optional

Method

Step 1 - Make Aval Powder:

Wash aval quickly once and spread on a cloth for 2 mins to remove excess water. Dry grind in mixer to a super fine powder. Sieve once for smooth balls.

Step 2 - Make Dough:

In a kadai, add aval powder and salt. Dry roast on low flame for just 1 minute - don't brown. Transfer to a bowl. Add HOT boiling water little by little and mix with a spoon. When warm, knead to a soft, smooth, non-sticky dough. If dough is dry, sprinkle more hot water. Keep covered for 5 mins.

Step 3 - Roll Balls:

Grease your palm with ghee. Pinch tiny portions and roll into very small, smooth pearl-sized balls (smaller than chickpea). The smaller, the softer and tastier. Keep covered with a damp cloth to prevent drying.

Step 4 - Cook the Balls:

In a wide kadai, bring 2 cups of thin coconut milk + 1/2 cup water to a gentle boil. Drop the rolled balls one by one. Don't stir for first 2 mins. Then gently stir. Cook on medium flame for 7-8 minutes until balls float up and become soft. Do not overcook.

Step 5 - Add Jaggery & Thicken:

Meanwhile, melt jaggery with 1/4 cup water, strain to remove impurities.

Add rice flour + coconut milk slurry to the kadai and mix gently - this makes the paal creamy.

Now add the filtered jaggery syrup. Mix gently.

Finally add thick coconut milk, cardamom powder, saffron. Just give one gentle boil and switch off. Don't boil vigorously after adding thick milk or it will curdle. Add ghee.

Step 6 - Serve:

Serve warm in a small silver bowl. It thickens as it cools. If too thick, add little warm thin coconut milk before serving.

My 5 Tips for Perfect Soft Balls - No Breaking!

1.  Fine Powder is Key: If powder is coarse, balls will be rough and break. Sieve it.

2.  Hot Water Only: Cold or lukewarm water makes hard balls. Use boiling hot water.

3.  Don't Add Jaggery Directly: Jaggery makes balls hard if added before they are cooked. Always cook balls fully in thin coconut milk / water first.

4.Never stir vigorously after adding balls. Use back of ladle.

5.Roll as small as possible. Big balls remain uncooked inside.

Storage: Stays fresh for 1 day at room temperature and 2 days in fridge. Always add little water/milk while reheating.
