Carrot Beans Thoran Recipe

Ingredients
For the vegetables
2 medium carrots, finely chopped
2 cups green beans, finely chopped
1 small onion or 2–3 shallots, finely chopped
½ teaspoon turmeric powder
Salt to taste
For the coconut mixture
¾ cup freshly grated coconut
2 green chilies
½ teaspoon cumin seeds
1 small garlic clove, optional
For tempering
1½ tablespoons coconut oil
½ teaspoon mustard seeds
½ teaspoon cumin seeds
2 dried red chilies, broken
1 sprig curry leaves
Method
Prepare the coconut mixture:
Add grated coconut, green chilies, cumin seeds, and garlic, if using, to a blender or mortar and pestle. Pulse or crush lightly. Do not make it into a smooth paste—the coconut should remain slightly coarse.Cook the vegetables:
Add the chopped carrots, beans, onion, turmeric powder, and salt to a wide pan. Sprinkle in 2–3 tablespoons of water, cover, and cook over medium-low heat until the vegetables are tender but still have a slight bite. Avoid adding too much water.Add the coconut:
Once the vegetables are cooked, add the prepared coconut mixture. Mix gently and cook uncovered for another 2–3 minutes. The thoran should be relatively dry, with the vegetables coated nicely in the coconut mixture.Temper:
Heat coconut oil in a small pan. Add mustard seeds and let them splutter. Add cumin seeds, dried red chilies, and curry leaves. Let them sizzle for a few seconds.Finish the thoran:
Pour the tempering over the vegetables and gently mix everything together. Turn off the heat.Serve:
For the best flavor, let the thoran rest for a couple of minutes before serving. Serve warm as part of an Onam Sadya or with steamed rice and your favorite Kerala curries.
