Pumpkin Rasavangi

Poosanikai Rasavangi is a traditional South Indian dish, hailing from Tamil Nadu cuisine, made primarily with yellow pumpkin (poosanikai) and a flavorful blend of spices. It's a delightful and comforting dish that pairs well with steamed rice or as an accompaniment to dosa or idli.

One of the most delicious and popular recipes is the also the Traditional heirloom recipes from Thanjavur. Poosanikai Rasavangi or Pumpkin Rasavangi .

Ingredients :

2 tbsp chana dal soaked for 15 minutes
1/2 cup cooked toor dal
1 tsp udad dal
2 tsp coriander seeds
Red chillies
1 tsp Chana dal
1/2 tsp pepper
Piece of hing
Curry leaves

1 tsp Coconut oil

Method :

With 1 tsp Coconut oil roast all above ( except soaked dal and Cooked toor dal )

till aromatic.

In the same pan also roast 3 tbsp coconut with few curry leaves.

When cooled , grind to a powder along with roasted coconut

In a pan cook peeled pumpkin small cubes with turmeric powder , 2 tbsp soaked chana dal or Cooked chana , or peanuts with pinch of salt.

Cook till just tender . When pumpkins are cooked ,

Add 1/4 cup Tamrind water , allow to boil till there is no raw smell of Tamrind , then add 1/2 cup cooked toor dal , add the roasted ground powder , adjust salt , dilute if needed , allow a gentle boil , remove and add a tempering in coconut oil, of spluttered mustard seeds, chana dal , curry leaves, mix well .

Enjoy with rice and papadam 😋
