Delicious hotel style Ghee Dose. This type of reddish ghee dose/ dosai is more popular in various Bengaluru eateries and famous hotels , while the thinnner crispy dosai is more famous in Tamilnadu, these thicker reddish ghee dose are equally delicious and yummy as they remian crisp till the last bite with some delicious potato palya inside on a smeared red chutney base.

Ingredients

1 cup raw rice ( dosa rice )

1 cup idli rice ( of which use 1/2 cup red rice if you can, i did not have any so i skipped it )

1/4 cup toor dal

1/4 cup chana dal

3/4 cup udad dal 1 tbsp methi seeds

1/4 cup white poha or thick red poha

1 ladle raw rice flour to be added to batter after fermentation . for extra crispy dosai, can skip if you do not have rice flour .

Method

Wash and soak dals and rice for 5 hours

Grind to smooth thick batter .

Cover and keep for fermentation .

After bater is well fermented, add one ladel of rice flour, mix well .

Allow batter to rest again for 15 to 30 minutes .

Prepare ghee dosas.

Use ghee for roasting dosas to get that rich roasted colour and aroma .

Smear red chutney, place the potato pallya , fold and serve .
