Kasi Halwa Recipe (Ash Gourd Halwa)

Prep: 15 min | Cook: 35 min | Serves: 4-5

Ingredients

  • 500 g ash gourd (white pumpkin), peeled and finely grated (about 2 cups)

  • ¾ cup sugar (adjust to taste)

  • ¼ cup ghee, divided

  • 10 cashews, broken

  • 1 tbsp raisins

  • ¼ tsp cardamom powder

  • A pinch of saffron or edible orange food color (optional)

Instructions

  1. Prep the gourd: Remove the seeds and skin, then grate finely. Squeeze out the excess water lightly, but don't squeeze it dry.

  2. Fry the nuts: Heat 1 tbsp ghee in a heavy-bottomed pan. Fry the cashews until golden, then add the raisins until they puff up. Set aside.

  3. Cook the gourd: In the same pan, add the grated ash gourd. Cook on medium heat for 10-12 minutes until it turns soft and translucent and the raw smell is gone.

  4. Add sugar: Stir in the sugar. It will melt and make the mixture watery. Keep stirring on medium heat for 10-12 minutes until the moisture reduces.

  5. Add ghee: Add the remaining ghee a spoonful at a time, stirring continuously. Add the milk and saffron or color if using.

  6. Finish: When the halwa turns thick and glossy and leaves the sides of the pan, add the cardamom, cashews, and raisins. Mix well and turn off the heat.

  7. Serve: Enjoy warm or at room temperature.

Tips for the Perfect Kasi Halwa

  • Choose a mature, white ash gourd for the best texture.

  • Add ghee gradually for that signature glossy, wedding-style finish.

  • Stir often in the last 10 minutes, as it can stick easily.

  • Store in the fridge for up to 4-5 days.
