BARLEY DOSA RECIPE
Ingredients:
• 1 cup Barley
• 1/2 cup Urad Dal (whole white urad)
• 1/4 tsp Methi / Fenugreek seeds
• Salt to taste
• Water as needed
• Ghee or oil for roasting dosa
Method:
1. Soak: Wash barley, urad dal and methi seeds together 2-3 times. Soak in enough water for 7-8 hours.
2. Grind: Drain the water and grind to a smooth, fluffy batter adding little water. Batter should be like regular dosa batter - not too thick.
3. Ferment: Transfer to a large bowl, cover and keep for 8-10 hours or overnight for fermentation. In cold weather, keep in a warm place.
4. Mix: Once fermented, batter would have risen. Add salt and mix gently. Add little water if too thick.
5. Make Dosa: Heat a dosa tawa on medium heat. Pour a ladleful of batter and spread in circular motion to make thin dosa. Cover with lid for a few seconds.
Drizzle ghee or oil, cook till golden and crisp. Fold and serve hot.
Serve with coconut chutney, tomato chutney, milagai podi and filter coffee!
