Red Gravy premix
Red Gravy Premix Powder is a simple and versatile homemade blend that helps you prepare delicious side dishes within minutes. It’s perfect for busy days when you need a quick base gravy ready at a moment’s notice. Just scoop out the required amount, add vegetables or paneer, and your curry comes together effortlessly.
This premix is also a wonderful option to send with your kids when they move abroad, or to carry along while travelling. With just one jar of this blend, you can create more than 20 different side dishes! You can also adjust the whole spices to suit your taste. The addition of milk powder is optional, but very useful—especially when fresh cream isn’t always available.
Using this single premix, you can prepare a wide variety of dishes such as capsicum masala, capsicum paneer masala, bhindi masala, chana masala, gobhi masala, aloo curry for pooris, matar paneer, paneer masala, matar masala and many more.
Ingredients
Blend the following to a fine powder and keep aside
1/3 cup cashewnuts
4 tbsp fried gram ( pottukadalai )
3-4 tbsp melon seeds
2 tbsp sesame seeds
Next blend the whole spices to a fine powder and sieve the powder to get fine texture . 3 bayleaves
2 big cardamoms
1 cinnamon
1/2 tsp pepper corns about 15 to 20 nos
. 6-7 cloves
5-6 green cardamoms
1 star anise
1 tbsp cumin
Note ;
you can adjust spice requirements according to your preference . more or less .
Other powders to be added as follows
3 tbsp coriander powder
1 tbsp ginger powder
3 tbsp onion powder , ( can add garlic powder also , if you like )
1 tbsp red chili powder
2 tbsp kashmiri chili powder
1/2 tsp turmeric powder
1 tbsp garam masala
1 tbsp pomegranate seed powder ( optional )
1/2 tbsp amchur powder ( optional )
1 tbsp ghee to roast all the blended powder
Method
Powder all spices as mentioned above, mix and add remaining dry powders, blend in dry mixie jar to a uniform consistency . blending in mixie after mixing all dry ingredients will ensure consistent colour and blend .
Take a pan, add 1 tbsp ghee,melt it , add the prepared premix powder and gently roast without burning . cool thsi powder and store in an airtight conatiner.
Use as needed by take a few tbsp in a cup, add water or milk to make a smooth thick paste , add to vegtables according to the dish . add salt to the dish as required .
Tips
If you are planning to send this powder abroad with your family for temporaray stays and for vacations, long road trips , you can also add tomato powder avaialble on line , to add to the premix for convenience so that it can be added without needing to add tomato puree seperately to the dish .
For home use i have skipped the process. It becomes even more convenient .
Store the premix in a jar and in refrigerator for longer shelf life .

This homemade white gravy premix is a real kitchen lifesaver. Aromatic, creamy, and full of flavour, it comes together easily and stays fresh when made in small batches. Perfect for quick curries, veg gravies, or paneer dishes whenever you need a mild, rich base.
Ingredients
30gm cashew nuts
10gm melon seeds
10gm poppy seeds
10gm sesame seeds
30 gms milk powder
1tsp cumin
1 inch cinnamon
2 nos green cardamom
1 tsp coriander seeds,
5 nos cloves
6-8 nos black pepper
1 tsp garam masala
1 tsp salt, or as needed
1 tbsp corn flour or fried gram powder
1 nos black cardamom ,
2 nos cinnamon
3 bay leaves
1 tbsp kasuri methi
1.5 tbsp onion powder
1 tsp garlic powder
1 tsp chaat masala ,
3 star anise .
1 tsp ginger powder .
1 tbsp pomegranate seed powder ( optional )
Premix Preparation
Method
Heat 1 teaspoon ghee in a pan. Add the whole spices—cinnamon, bay leaves, cumin seeds, cloves, green cardamom, black cardamom, and star anise. Roast gently until fragrant. Switch off and keep aside.
In the same pan, lightly roast cashew nuts, poppy seeds, sesame seeds, coriander seeds, and pepper. Roast just until aromatic—do not brown.
To a blender jar , Add cashew nuts and melon seeds and grind in intervals to a fine, smooth powder.
Transfer this ground mixture to a bowl. Add milk powder, corn flour, salt, onion powder, garlic powder, garam masala, chaat masala, ginger powder, and crushed kasuri methi. Finally, add the roasted whole spices and mix thoroughly until well combined.
Your white gravy premix powder is now ready to use.
Storage Tip
Store in an airtight container. Always prepare and store in small batches to retain freshness, aroma, and flavour in every use.
