Seven Cup Burfi, also known as 7 Cup Cake, is a classic South Indian sweet that beautifully balances richness and simplicity. Made with just everyday ingredients — milk, sugar, ghee, coconut, and gram flour being the stars — this burfi turns into a soft, fudgy delight that melts in the mouth. Its golden color, fragrant aroma, and perfect sweetness make it a festive favorite, especially during Diwali, when homemade sweets carry that special touch of love and nostalgia.

7 cup cake or the 7 cup Barfi is the most popular sweet among South Indians. Now made popular all over the country.
This is a perfect sweet to make for beginners who are afraid to try Mysore paak , as it is simple, with a single line instruction.
Mix all ingredients, keep on gas, stir well till hardened and pour on a greased plate.That s it!!
The rest is all tips and steps.
The recipe is called 7 cup cake or 7 cup Barfi as the total no of cups used comes to 7.
3 cups sugar, 1 cup milk, 1 cup coconut, 1 cup ghee, 1 cup besan flour. Technically I cannot call my recipe as 7 cups as I reduced the sugar from 3 cups as mentioned in many recipes. It makes it very sweet.
Choose any cup of your choice but use the same cup to measure all ingredients.
Even a small steel tumbler will do to measure the ingredients.

Ingredients:

2 1/2 cups sugar ( although 3 cups is mentioned in almost all recipes , but it makes it too sweet, so decide if you want to increase the sweetness. )
1 cup ghee
1 cup besan flour/kadala maavu/ chick pea flour
1 cup freshly grated coconut or use desiccated.
1 cup milk ( use full fat milk for a richer barfi )

Method:

  1. Keep a tray or a steel plate greased and ready.

  2. In a wide deep heavy bottomed pan , preferably non stick add all the dry ingredients, mix well.

  3. Add the milk, melted ghee, and now stir well with a whisk to remove lumps.

  4. Keep on a slightly high flame in the beginning , stirring at the same time.

  5. After 3 to 4 minutes reduce flame to medium , keep stirring , till mixture comes together frothing just like in Mysore paak preparation towards the end , reduce flame to low, without leaving hand, keep stirring.

  6. Check a small drop in a plate, it should firm up immediately on cooling.

  7. Remove from the gas and quickly pour the thickened frothing mixture on a greased plate.

  8. Start smoothing with a smooth spatula gently.

  9. Wait for 3-5 minutes before you start making the slice marks with a knife.

  10. Let the plate cool well.

  11. When almost cool and the Barfi appears hardened, simply upturn the greased plate on to a bigger plate upside down.

  12. You will get a perfect round single hardened cake with the slices almost falling off neatly as you have already scored the top with a knife.

  13. Store in container .
