Ingredients:
4 slices of bread (white or brown)
1 cup grated cheese (cheddar + mozzarella mix works best)
1 green chili (finely chopped, deseed for less heat)
1 small onion (finely chopped)
2 tablespoons capsicum or bell pepper (any color, finely chopped)
1 tablespoon fresh coriander or parsley (optional)
1/2 teaspoon chili flakes (optional, for extra kick)
Salt to taste
Black pepper to taste
1 tablespoon butter (softened)
Instructions:
Preheat oven/grill to 180°C (350°F), or heat a non-stick pan if using the stovetop method.
Lightly butter one side of each bread slice.
In a bowl, mix grated cheese, chopped chili, onion, bell pepper, coriander, a pinch of salt, black pepper, and chili flakes.
Spread the cheese-chili mixture generously on the unbuttered side of each slice.
Cook:
Oven/Grill: Place on a tray and bake for 5–7 minutes or until cheese melts and edges turn golden.
Stovetop: Place slices in a pan on low heat with the lid on (cheese side up) and toast until the bottom is crispy and cheese is melted.
