Instant Rice flour dosa or Neer dosa ( use any millet flour in place of rice flour if you wish to swap flours . It gives similar results )
This is a simple and delightful two-ingredient recipe one of my favorites, Rice Flour Dosa, cooked instantly without the need for fermentation or batter resting. I guess You can also call it to a Neer Dosa, given the similarities.
Earlier I have prepared these dosas with millet flour and they give almost the same result . ( I have used barnyard millet flour )
This Rice flour dosa Recipe uses only rice flour and grated coconut, perfect for busy mornings and lunch boxes, as these thin dosas remain soft for hours. I Paired with a nutritious saagu, a famous Karnataka side dish, with a medley of assorted vegetables like nool khol , carrots , beans , peas , potatoes . I wanted a side dish that would elevate these plain dosas beyond a simple coconut chutney. So Saagu it was ! My brunch was complete 😋

Ingredients:
1 cup raw rice flour
1/2 cup grated fresh coconut
Salt
Method:
Blend rice flour and grated coconut with 2 cups of water to get a thin batter resembling a thick milkshake.
Adjust consistency with water and add salt.
To enhance the flavour of the dosas , I added some chopped coriander leaves and green chilies for flavor. Totally optional . However it does make pretty dosas isn’t it 😁
Heat a griddle, pour the batter around the pan, cover, and cook. Use ghee or oil if desired; these dosas generally require minimal oil.
flip and cook both sides if you prefer .
Serve with coconut milk curries , veg stews , or chutneys. I paired mine with a hearty vegetable saagu, making it a satisfying meal .
