Temple style sambar
Delicious ๐ temple style sambar with Mangalore cucumber made in a simple but tasty way without onions and garlic . The sambar will tempt you to have several helpings and you will eat more rice than usual . This is the closest it comes to that perfect Temple taste . Many of us have relished the sambar served in temples specially in Karnataka, Udupi Dharmasthala Subramanya . Very little variations are there in each temple according to regional practices .Every bhattar or the temple priest has the recipe handed down to them from their peers or CVhief Priest and kind of a family secret although you find many proiest willing to share the method in temple premises .
Ingredients
To roast and grind to a paste
1 tsp udad dal
1 tsp coriander seeds
1/2 tsp cumin seeds
1/4 tsp methi seeds
1/2 cup grated fresh coconut ๐ฅฅ
Small piece of asafoetida solid or powder .
Few curry leaves ๐
4 red chilies or as per your preference for spice
You can add 2 KAshmiri chiles too to get a good colour .
Other ingredients
2 cups cubed Mangalore Cucumber
2 tbsp Tamrind paste
1/3 cup toor dal washed and cooked till soft
Pinch of turmeric powder
Salt
1 tbsp coconut ๐ฅฅ oil
1/2 tsp mustard seeds
1 tbsp jaggery ( optional )
Method
1. To a pan , add 1 tsp coconut ๐ฅฅ oil . Roast Ingredients Mentioned . Add few curry leaves , 1/2 cup grated coconut ๐ฅฅ , roast till aromatic. Allow to cool , grind to a smooth paste .
2. Pressure cook toor dal with a pinch of turmeric powder , keep aside .
3. Meanwhile wash and chop the Cucumber , to big chunks .
4. Take the cooker , add the chopped pieces of cucumber with 1/2 cup water . Add turmeric powder , salt , few curry leaves , let It come to one boil , then add Tamrind paste, mix well , add cooked dal , ground paste , close cooker and allow 2 whistles .
5. Open pressure cooker when cooked , stir the Sambar which Is done perfectly .
6. Prepare the tempering with coconut oil , splutter mustard seeds , add few curry leaves , pour over the prepared sambar , garnish with chopped coriander leaves .
7. Delicious ๐temple style sambar is ready .

Mash and keep the cooked dal aside .

Ground coconut and masala paste for preparing the sambar.

add the chopped pieces of cucumber with 1/2 cup water . Add turmeric powder , salt , few curry leaves , let It come to one boil , then add Tamrind paste, mix well , add cooked dal , ground paste , close cooker and allow 2 whistles
add 2 tbsp of tamrind paste
Open pressure cooker when cooled, sambar is ready , add tempering .
