There’s something truly nostalgic about the aroma of freshly fried chaklis wafting through the kitchen during festival time. Besan Chakli, also known as Murukku, is one of those timeless Indian snacks that never fails to bring comfort and crunch in every bite. Made with gram flour (besan), a touch of spices, and shaped into perfect golden spirals, this crispy treat is a staple during Diwali and festive celebrations. It’s easy to make, light to munch on, and stays fresh for days — making it an ideal tea-time snack or festive gift.

Spicy besan murukku/ chakli can be prepared quickly even as your tea is getting ready . I have prepared them as round shaped ones easy for storing or giving , and also some broken pieces which I deep fried by pressing the dough directly into hot oil.

Ingredients

1 cup rice flour

1/2 cup besan

1 tsp chili powder or as preferred

1/4 tsp crushed ajwain

pinch of turmeric powder

pinch of asafoetida powder

salt as required

1.5 tbsp butter or

3 tbsp hot oil

oil to deep fry

Method

mix the flours well, then add butter and make a crumble of the flours , add ajwain , chili powder, salt, , asafoetida powder , add water slowly to mak e a smooth firm dough

, shape into round murukku with help of a muruku press or press directly into hot oil as sticks.

make sure oil is heated , well,drop a pinch of dough , it must sizzle and come up immediately, then reduce flame to medium and press the dough into hot oil , allow to cook both sides, these murukku will become crisp on cooling
